Image If I don’t have fresh meat or fish in the motorhome, then my quick and easy fish cakes provide a great stopgap meal.

Ingredients:  a packet of instant potato, a tin of tuna (or salmon), and a few dried herbs if you have them.
Method: Make up the potato according to the instructions on the packet and mix it with the drained fish.

Add the herbs (not obligatory but does improve the taste) and season with pepper. Now, just take out a ball of the mixture and shape it into a patty, repeating until you have used the mixture.

Finally, dry-fry the fish cakes in the skillet or frying pan and serve with a good salad and wedges of lemon if you have them. During colder weather, I serve them with some tinned vegetables particularly sweetcorn which is one of my favourite veggies. The fish cakes make a filling meal and you can make them to any size you want depending on whether they are for adults or children.

You can do similar things with corned beef to make a hash which you then dry-fry.
