Posh chicken

 Many of you will have tasted a chicken dish called Chicken Melt, Smothered Chicken, or something similar when you’ve been out for a meal, but how many have tried to cook it in the motorhome (or at home). It’s easy.

Ingredients (per person): 1 chicken, two rashers streaky bacon, grated cheese

 

 Dry fry the chicken fillet and bacon in the skillet or frying pan. When the bacon is cooked and you’ve turned the chicken over to cook the second side, pop the bacon on top of it. Alternatively, wrap the bacon around the chicken and cook together. Meanwhile grate or finely chop some cheese and melt it in the space where you cooked the bacon. When the chicken is fully cooked, put it on the serving dish and gently lift the melted cheese on top of it.

Putting the cheese onto the chicken is the messiest part of the recipe as the cheese is runny. I put a small square of Bake-O-Glide into the skillet (on top of the large liner that I use all the time) and melt the cheese on that. You then carefully lift out the sheet of Bake-O-Glide and upturn it onto the chicken – please be very careful not to burn yourself as the cheese is very hot. Serve the chicken with mashed creamy herb potatoes and mixed vegetables – for the meal in the photograph I chose a mix of tinned beans and sweetcorn.
